Who doesn't love to receive a bottle of Champagne, and what a Champagne this is!

Comprising 7 hectares of vineyards around Crouttes-sur-Marne, Francoise Bedel have been fully converted (and certified) to Biodynamics for 7 years this year. The plantings consist of 78% Pinot Meunier, 13% Chardonnay and 9% Pinot Noir. The Domaine is run by Francoise and her son Vincent.

The grapes are gently pressed in a pneumatic press. The still, base wines are fermented either in Oak or enamel tanks. The base wines are then blended and bottled for the second fermentation, the wine is then left in bottle for four years minimum. Remuage is still carried out by hand.

At Bedel they favour old fashioned enamelled tanks rather than the harsher stainless steel. This brut was formed from base wines all of the 2001 vintage, the wine was left in contact with its lees for four years. The additional the weight of fruit, rich autolysed flavours of toast and honey are exquisite and the dryness and acidity are well balanced.
