Following on from my article regarding Imbolc, here is one of my favourite recipes for this day.

INGREDIENTS
* 225ml - Clear honey
* 75g - unsalted Butter
* 350g - Plain flour - 350g
* Bicarb of soda
* 3 medium eggs
* Milk
* Ground mixed spice
* 50g lemon peel
* Zest of 1 large lemon

TOOLS
* 8 inch square cake tin
* Greaseproof paper
* Saucepan
* Sieve
* Large mixing bowl
* Small mixing bowl

RECIPE
Firstly, pre-heat the over to 170 degrees / Gas mark 3. Next take the cake tin and lightly grease and then line with greaseproof paper. Pour the honey into a medium saucepan, heat gently then add the butter and stir slowly.

Once the honey and butter are well mixed, sift the flour, spice and bicarb of soda into a large mixing bowl. Cut up the lemon peel into small pieces then add to the mixing bowl.

In another bowl put the eggs and milk and mix well. Add this to the honey and butter mixture and stir well. Next add the lemon zest.

Slowly add the dry ingredients to the pan, mixing until well blended. Pour the mixture into the caketin. Bake for about 1 ¼ hours. Check the cake is firm to the touch.

Once baked, prick the cake top all over with a fork and drizzle the rest of the honey over the top.

Leave to cool then cut into squares for easy sharing. :)
