Funny Hurried Yummy Summer Honey Kohl Rabi Stir-Fry

Last night's dilemma: we have 30 minutes before we have to leave the house. We're starving. We've got these items in the fridge to use:

Half a kohl rabi
4 little carrots
1 pak choi
Half a sweetheart cabbage
Half a bag of spinach
1 wet garlic
2 spring onions

Cue "Flight of the Bumble-Bee" and chopping for my life - it was stir fry time!

First I put on a pot of hot water for steaming with.

Then I spent 5 minutes chopping the kohl rabi and carrots into little sticks, and slicing the garlic, onions and cabbage. I left the pak choi and spinach as they were.

I put a tiny splash of olive oil in another big saucepan, heated it, and threw in the garlic, spring onions, kohl rabi, carrots, and cabbage.

Meanwhile I steamed the pak choi.

After 5 minutes, I shook some apple cider vinegar into the frying veggies, followed by a generous squeeze of runny honey.

After another 5 minutes of stirring and frying, I added the wilting spinach leaves and threw in a handful of cashews.

Then I dumped the whole lot onto plates, placed the steamed pak choi next to it, and summoned VegBox Husband. 15 minutes later we had eaten and were out the door, safe for now from the ever-looming snack-attack!
